5 Delicious and Easy Breakfast Ideas for Teachers

Okay, the school year is back in full swing and your body still longs for the late wake up times of summer break. You know you need breakfast to survive the day ahead feeling good, but there just doesn’t seem to be time. Well, you don’t need to sacrifice nutrition OR precious minutes of sleep. Try these creative breakfast ideas to get yourself out the door ready to take on the world, one class period at a time.

Blueberry Banana Overnight Oats

What you need:

  • 16oz mason jar
  • ½ C rolled oats
  • 1 tsp chia seeds
  • ½ C unsweetened coconut milk
  • ½ banana peeled and chopped
  • ½ cup of blueberries, fresh or frozen
  • 1 tablespoon pure maple syrup

The night before (or up to 3 days before) add rolled oats and chia seeds to the jar. Pour in the milk and add the fruit to the top. Finish by adding the lid and placing in the refrigerator. Allow this to sit overnight and simply remove from the refrigerator in the morning, stir and enjoy with a little maple syrup. This recipe is great because it’s healthy, filling, and has no added sugar.

Maple & Brown Sugar Overnight Oats

What you need:

  • 4 – 16 oz mason jar
  • 2 C rolled oats
  • 1 tsp vanilla
  • 2 C almond milk
  • 3 T brown sugar
  • ¾ tsp cinnamon
  • 3 T pure maple syrup
  • ¼ C pecans coarsely chopped, toasted

In 4 mason jars place equal amounts of oats, vanilla, and milk. Stir well. In a small bowl, combine the remaining ingredients (sugar, cinnamon, and syrup). Divide mixture over each jar. Place lids on jars and place in the refrigerator overnight. In the morning simply stir and add pecans.

Ham & Cheddar Egg in a Mug

What you need:

  • Microwave safe mug
  • 2 eggs
  • 1 T milk
  • 1 oz. cheddar cheese
  • 1 oz. ham

Spray the inside of the mug with nonstick cooking spray. Crack the eggs and place in the mug with milk. Do not stir. Cook in microwave for 1 minute, until slightly set around the edges. Add the meat and cheese and stir together, mix well. Place back in the microwave and cook for an additional 30 seconds. Remove and enjoy.

Coffee Cake Mug Cake

What you need:

  • Microwave safe coffee mug

Mug Cake

  • 1/4 cup all-purpose flour
  • 2 T brown sugar
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 cup milk
  • 1 1/2 T butter, melted


  • 1 T butter, softened
  • 2 T brown sugar
  • 1 T flour
  • 1/4 tsp cinnamon

Combine all ingredients for the mug cake in a small bowl. In a separate bowl combine the ingredients for the topping. Spray coffee mug with nonstick cooking spray. Place cake batter into mug and place the topping mixture on top. Bake in the microwave for 60-90 seconds.

Note: This also makes a great dessert if you are on the go.

Healthy Pumpkin Mug Muffin

What you need:

  • Microwave safe coffee mug
  • 1 tsp coconut oil (melted)
  • 1 T milk
  • 1 egg
  • 2 T pumpkin puree
  • 1 T maple syrup
  • 3 T whole wheat flour
  • 1/2 tsp baking powder
  • 1/4 tsp pumpkin pie spice or cinnamon

Add oil, milk, egg, pumpkin, and syrup to a greased mug. Use a fork to mix well, stirring until smooth. Next, add in the flour, baking powder, and spice (pumpkin pie spice or cinnamon). Mix everything one more time. Bake for 60-90 seconds in the microwave, until muffin has formed. This goes really nicely with a pumpkin spice latte from your favorite coffee shop. Isn’t Fall wonderful?!
