Chill Out and Grill Out: Summer Dinner Ideas
Summer is here and that means it’s time to fire up the grill and have dinner outside. Don’t use the longer nights slaving over your food. Instead, spend that extra time to relax and enjoy the food and the people you’re eating with.
Here are some quick, healthy, and delicious dinner ideas that won’t disappoint!
CHICKEN
If you’re looking to keep it simple, but still want some mouth-watering flavor, this recipe only has three ingredients!
Soon Jersey tomatoes will be ripe and ready to eat, and this recipe is a great way to use them. Although it requires a little bit of chopping and an easy homemade balsamic reduction, this recipe is both fresh and delicious. Pine nuts are optional.
FISH
In just 30 minutes, you can be sitting down to eat this summer staple. This recipe is great if you are looking for a sweet and mild fish flavor.
This salmon is grilled in foil so there is no messy flipping. The foil also serves to keep those tasty flavors close to the salmon, leading to a perfectly satisfying dinner.
MEAT
Sometimes, you just need some perfectly cooked beef to make dinner feel complete. This recipe is so simple, just allow a couple of hours for the steak to marinate, and grill it up. Serve it with a side of grilled asparagus and ENJOY!
Grilled Flank steak with black Beans Corn and Tomatoes
I actually eat this a few times a month every summer. It not only tastes great, but it’s good for the waistline. Flank Steak is one of the leaner meats (fewer calories and more protein) and the recipe creator gives nutritional information and Weight Watcher Points.
PIZZA
Pizza is great for so many reasons and pizza on the grill just kicks this classic comfort food up a notch. And the best part is that you can put your chef’s hat on and create your favorite flavor combination. If you’re not sure how to make the pizza check out this link:
If you are a BBQ fan, this might be the best pizza ever!:
KABOBS
Dinner on a stick! These are not your standard meat and veggie kabobs. Instead of having steak and tomato kabobs with a side of garlic bread, this recipe includes everything on one skewer. Easy and yummy!
BBQ Chicken and Pineapple Kabobs
Here is more of your standard kabob recipe, but the taste is anything, but ordinary.
SALAD
Not sure what could be more GARDEN FRESH than a summer salad, but with added protein (complete with a nicely charred grill taste) these options are both healthy and filling:
Honey Mustard –Chicken, Avocado and Bacon Salad
Strawberry and Avocado Spinach Salad with chicken
Sit back and relax in your shorts and flip flops and enjoy delicious food in a more relaxed setting…one of the many benefits of a Jersey Summer.
